Ok, overnight oats are officially out and baked overnight oats are in!  Back in my school days, I used to be obsessed with prepping overnight oats for the week, a quick grab-and-go for those early morning lectures. They were great and served their purpose.  However, things change, life happens, and new amazing recipes emerge.  Enter baked overnight oats, which is pretty much like next level overnight oats. And now, we’re taking it even further with this delicious blueberry peach baked oatmeal.

These bad boys can still be prepped ahead of time and baked fresh each morning. Perfect for those who were not fans of cold oatmeal and prefer waking up to a warm, comforting dish. They retain all the nutritional goodness of traditional overnight oats but with an added dessert-like flavor profile. You have two options: either bake all 4 dishes together and reheat in the microwave each morning, or store in the fridge and bake individually for a fresh serving each day.

  1. In another bowl, whisk together the honey, stevia, egg, and vanilla extract.

  1. Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over each dish. Sprinkle the remaining walnuts over the top.
